One step closer

Two weeks passed since the day I'm done with exam. Two weeks, for two weeks I've done a little bit more to complete my life. A little step at a time, but I am definitely gonna do this. I will fill up my life, nothing like before. Not that I didn't enjoy my past, but I've learnt so much more here. my eye sight go opened up and it leads me to seeing things differently, precisely in the sense of pursuit of happiness and the learning process itself. There was a long period of time, thinking dreams are just dreams. They are so beautiful because they are dreams. But now, despite the unknowing timing for them to turn into reality, I've learnt to enjoy the process itself, making sure I'm closer to the dreams, not being stagnant.

For my love in coffee, I've attended coffee classes to push my knowledge further, both theory and practical part. And I'm actually looking into getting a domestic coffee machine that suits my budget. Aiming on one, and hopefully will be able to get it on hand soon.

Ahhh my first attempt of doing latter art, I'm so gonna master it, I will...

Also I'm experimenting more on cooking and baking nowadays. Looking up for new recipes every now and then, and trying them out. I'm going all out lol putting much more effort and budget in it than before. One reason being the free time I have now, and also for the sake of wide range ingredients available here compared to my hometown, if I were to go back one day, or soon.

So I baked chocolate fondant, served with pavlova ice-cream. I used dark chocolates for the fondant so the sweetness from ice-cream could just even out our palette.

Baked scallops, with creamy sauce and cheese. Happy with the end result, they turned out great and not soggy at all.

This is a random one, chocolate cookies. I just simply followed the recipe given by the chocolate bites pack. They turned out to be rather flat and huge ones, like those Subway cookies, but slightly more crunchy.

I am not stopping these passion here. After a family trip next week, I shall continue with my adventures. It feels great. To be honest, I feel powered, instead of feeling bored for all the free time I am having now. I guess that's the magic of doing things that you're interested in.

My pancakes

By far the best pancake recipe I've found =)
Because its fluffy!
Sort of having pancake crave lately, no idea why...
But eating pancakes remind me of waffles!
I love waffles but waffles here are so expensive ! =(
It's just not really worth it having the waffles at such high price frequently.
I guess that contributes to my pancake fever.
Plus I can't make waffles without the waffle mould, so I keep on making the pancakes nowadays.

* The owner of the recipe refrigerated the batter overnight, but I only refrigerated it for around 20-40 mins. It is not that important as long as the batter is slightly thickened. The recipe made 5-7 pieces of pancakes depending on the size.

PANCAKE RECIPE

1 cup flour
1 tsp baking powder
pinch of salt
1 cup milk
1 egg, separated
2 tsps caster sugar
1 tbsp oil

directions :
1. combine flour, baking powder & salt in a bowl and mix well.
2. in another bowl, whisk together egg yolk, sugar and milk followed by oil. mix well and add it into the flour mixture and whisk to combine.
3. whisk egg white until soft peaks, then fold into the above mixture. at this point i refrigerated the batter overnight. this step is entirely optional but it does thicken the batter abit and prevent it from spreading too much when cooking.
4. heat griddle or a non-stick frying pan on medium low heat then scoop batter, about 1 ladleful onto the pan. cook until bubbles appear evenly on the surface, flip it over and cook until golden.

happiness from plant? and food!

I've always wanted to have a puppy. However, there's always problems arising which force me stop from getting one.
Well I guess I won't be able to have one in my near future until I settle down at a place with a satisfactory job and of course, salary that's enough for me to rear a puppy.
For now, I am just so satisfied with getting a plant for myself.
Oh yes a plant won't be able to manja with me and play with me, but I guess I can push aside the stress while looking at it.
It just gives me a state of clear mind
Here's my plant I just bought today =D

today is kinda productive actually, by that I mean full of happiness.
and also full of food..
I cooked yellow glutinous rice and curry for lunch..
And... and.. i baked cookies today ^^
